We finally linked up with our buddies from Soul Lao for a collabo. Starting with an IPA (suprised?), we then decided to layer some of their favorite herbs and spices. We used Lemongrass, Makrut lime leaves picked from Eric’s Grandmother’s tree and a dash of chilies to add a bit of herbaceous complexity to the Simcoe and Mosaic hops. Growing the Lao food scene is about much more than tasty food. For Eric, Sabrina and their family it is about continuing a legacy. It has really been a privilege working with them to that end.
